Heat the butter in a pan, then
cook the pice of meat with the rosemary,
salt and pepper. When the meat is brown, diminish
the fire and let cook for 10 minutes. Take the
meat off the fire and leave to cool (also the
cooking sauce in the pan will be used later).Wrap
the meat in a sheet of pastry, brush the surface
with the yolk and bake at 230 degrees for 35
minutes. When it's ready, cut all in slices and
pour the cooking sauce over them.
