September 10 2005 - A month at the sight of the taste of the salt of Cervia for the research of the traditions and of the quality, between oenogastronomic and naturalist routes, with a pinch of magic and the promise to live big emotions.

“September, taste of salt” arrives at the nine edition with many news.
It begins with the discovery of the tradition: september 10 and 11 is renewed the ancient rite od the reserve of the salt. The white gold is collected, strictly at hand, and is transported, on the “burchiella”, the ancient boat used from the salters, until the Storehouse of the Salt, where in past happened the stock of the precious mineral. To receive the salt, will be, as in past, the festive population, that in the two days of the picking will have in present a little of salt, that, always according to the tradition, is well auspicious for all year. During the two days of the festival of the salt will be active an oneogastronomic stand, administered by the Club of the Fishermen, in which will be possible to taste the local fish cooked and seasoned with the sweet salt of Cervia. And Always the salt will be protagonist also of the “Small market of the salt and of the tradition”, in which will be possible to buy salt and products created with the cervese salt between that the chocolate at the salt, an true excellence culinary, products for the well-being of the body and typical local products that wine and the honey. In the same days will be developed also an important scientific moment. For the second consecutive year the Italian Academy of the cooking organizes at the Mare Pineta the international convention "The streets of the salt", in which the major experts of the sector will debate about the use of the sweet salt of Cervia.
Will be reproposed also this year, in fact, the "Sfornata al Sale". It is an initiative that initials the collaboration with the city of Faenza, in which, for the second consecutive year, the famous faentini ceramists willtake out of the oven some sole pieces in pottery in an ancient oven of the '500. Between the refined pieces of handicraft will do not lack the rare containers for the salt, that will be then sold in an auction of which the proceeds will be given in charity.
For the lovers of the nature the first appointment the day 16, at 03.00pm, by the agriturismo “Le Ghiaine” with “The Festival of the grapes” when, beyond to immerse oneself in the atmosphere of the vintage, will be possible to try the emotion now rare to enter in a vat and press grapes. Sole and suggestive experience, that allows to live an only and overwhelming emotion, in program september 19, when will be possible to visit the saltern and try on own skin, the emotion of a stroll in a basin of salt sinkinf the foots in the salt just produced. But during all month of september will be possible to visit the the salterns, in the most active period of the production, following a guided route that shows and explains the various phases of working, production and picking of the salt with industrial and handicraft method in an suggestive environment characterized from the rosy colors of the baths of production and from the bright white of the heaps of salt. In the same days the Museum of the Salt, Musa, will be open for free guided visits.
For the lovers of typical products will be then “The small market of the taste of Europe”. In Andrea Costa square, behind the wonderful Storehouses of the Salt, for a whole weekend, from the afternoon of the 16 until the evening of sunday 18 of september, the culture and the shopping are international with the opportunity to know cultures and habits of various european countries. Over 100 pedlars of all Europe and of the italian regions give appointmet to themselves at Cervia to propose typical products of gastronomy and handicraft of their places of origin.
